Since Healthy Eating is becoming increasingly important, I decided to put together a few cooking videos to show you how easy it is to eat healthy on a daily basis. This recipe for Apple Carrot Salad, reminds me of a dish I used a lot when I was I younger, carrot raisin salad. The recipe I was familiar with used lots of sugar and canned pineapple to add sweetness. This version takes out the canned pineapple and replaces it with fresh, crunchy apples.

Apple Carrot Salad



Apple Carrot Salad

Preparation Time: 10 minutes

Number of Servings: 6

Ingredients:

1 cup shredded carrot

3 (medium) diced apples

1 Tbsp lemon juice

1/2 cup raisins

1/3 cup low-fat mayonnaise

Directions: Combine all ingredients. Chill thoroughly. Serve on salad greens.
