Recipes for Sour Cream Waffles, Pecan Waffles, and More.

Waffles bring back happy memories. When I was a little girl, we would go over my Aunt Daisy's house on the weekends. I looked forward to those weekends because it meant I didn't have to eat cereal for breakfast. If we were lucky, we would get pancakes, sausage, fried apples,grits every now and then, or maybe even waffles. She made her waffles with a baking mix you find in any grocery store. Even so, they were good.. She has had the same waffle maker for over thirty years and its almost as if it imparts it own flavor into the waffles.

Her waffle iron is seasoned as well as any good cast iron skillet. The recipe for her waffles was conveniently located on the side of the big yellow box. I have a from scratch recipe here, but feel free to expand on a quick mix recipe by adding chopped nuts, berries, or even chocolate chips.

Sour Cream Waffles

3 eggs, separated

2 cups Sour Cream

1 tsp Baking soda dissolved in 1 Tbsp Hot Water

1cup, plus 2 Tbsp All Purpose Flour

1/4 tsp Salt

2 tsp Baking Powder

1 Tbsp Sugar

1. Beat the egg yolks until they are thick and lemon colored. Add the sour cream until well combined. Add the dissolved baking soda and miw.

2. In a separate bowl, beat the egg whites and set aside.

3. Sift the flour, salt, baking powder and sugar into the egg yolk mixture. Fold in the reserved egg whites.

4. Bake on a waffle iron according to the manufacturers direction.

For Pecan Waffles, just add a Tbsp of chopped pecans to the top of the waffle batter before you close the lid.

Savory Waffles

Another interesting Brunch recipe is for the savory waffle. Savory waffles have salt, pepper and other flavorings added to basic waffle batter. Feel free to experiment on your own by adding fresh herbs, spices and other ingredients of your favorite dishes to the basic waffle batter. These waffles can be a meal themselves. Think ham and cheese mixed in with the batter and topped with chive sour cream instead of syrup. Or mix chopped sauteed mushrooms and sun dried tomatoes in the batter then top the cooked waffle with thinly shaved Prosciutto ham.
